What's great, for all of you inquisitive types, is that his site offers an inside look at the process he uses to get from, point A: onion, fennel, melon etc. to point B: creating a form that is perfect by nature and turning it into an exquisite fragile piece of art. A bit of 'gilding the lily' you might say
